My professors began emailing me class syllabus, just while I was baking! I guess I would like to try a few more recipes before the rush of September; hopefully I would. With eating healthier and working out, I have developed an appreciation for healthy recipes—some recipes you can’t even tell they are low-fat, really. So, I have decided to make these low-fat chocolate biscotti’s that go really well with my morning coffee. I really love biscotti’s –especially low-fat ones. Apparently 50 cal for one piece. Not bad huh 🙂

Lessons Learned: Well, I never knew that biscotti’s need twice the baking for them to be crunchy, yet soft in the middle. You just bake them once, take them out to cool, then you bake them twice. I found that interesting!
